Sweet Chilli Sauce
Introduction
Below is the original recipe which yielded a very palatable chilli sauce. Over the years, however, the recipe has been refined and simplified; our current chilli sauce recipe is now online, or can be downloaded as an illustrated pdf file.
Ingredients
- 2 lb chillies, split lengthways, core & seeds removed
- 8 oz onion
- 8 oz butternut squash
- 1 lb sugar
- 1 tsp salt
- 5 fl oz vinegar
Method
- Mince the chillies, onions and butternut
- Sweat over gentle heat until cooked
- Push the cooked mixture through a seive
- Add salt and vinegar to mix and bring to the boil
- Add sugar and continue cooking
- Pour into warm sterilized jars & seal
- Allow to mature for a few weeks before use
Notes
- You could use apple in place of butternut
- The pungency of the sauce will depend on your choice of chillies
- Sweet fragrant chillies make delicious sauce
- Maturing gives a smoother more rounded sauce
- Hotter sauces need longer maturing
